Mediterranean Tempeh with Pumpkin, Peas and Buckwheat
Smoked-paprika tempeh browned with rosemary, then cooked with pumpkin, onion petals, peas and red wine and tossed with buckwheat in one pan.

Bring a pot of water to the boil with 3 tsp of salt, pour in the buckwheat and cook until tender, about 10 minutes or as the package says. Drain it in a colander and rinse it under running water.
Tip: Start the buckwheat first: it cooks while you prepare and cook everything else. -
Cut the tempeh into 1 cm cubes and put them in a bowl.

Add the smoked paprika, black pepper, garlic powder and 2 tbsp of olive oil, and mix well.

Sprinkle over the cornstarch and toss until every cube is coated.

Peel the pumpkin, remove the seeds and cut it into 2 cm cubes.

Peel the onion and cut it into wedges, then separate the layers into petals.

Heat 3 tbsp of olive oil in a large non-stick pan over high heat. Add the tempeh and cook until golden, turning it now and then, and lay the rosemary sprigs on top.

Turn the heat down to medium. Add the pumpkin, stir, season with 2 tsp of salt and cook for about 8 minutes, tossing the pan from time to time.

Add the onion and keep cooking, tossing now and then.

Add the frozen peas, then pour in the red wine and let it cook off.
Tip: Canned peas work too: add them at the end of cooking instead. -
Stir in the cooked buckwheat until everything is combined, then serve.
Storage & Meal Prep
Keep leftovers in a closed container in the fridge for up to 3 days, or freeze them. Reheat in the microwave or in a pan.
FAQ
Is this recipe gluten-free?
Buckwheat is not related to wheat and none of the listed ingredients normally contains gluten, but some tempeh is made with grains or may contain traces. Check the tempeh label if you need it gluten-free.
Is red wine always vegan?
Not always. Some wines are clarified with animal-derived agents such as gelatin, isinglass, egg white or casein. Choose a wine labelled vegan.
Can I use canned or dried peas?
Frozen peas go in straight from the freezer. Canned peas are already cooked, so add them at the end. Dried peas are not suitable here.
What does the nutrition estimate include?
It includes all the listed amounts, the 5 tbsp of olive oil and the 2 tsp of salt added in the pan. It leaves out the salt in the buckwheat water, which is drained away, and the rosemary. Serving the dish to 6 people instead of 5 lowers each figure by about a sixth.
