Instructions
-
Finely chop the onion, the garlic and the parsley. They go in raw and cook in the oven.
Tip: Chop them small: big pieces stop the layers from sticking together. -
Drain the kidney beans well, put them in a bowl with the tofu and mash both with a fork.
Tip: Drain the beans well: a wet mixture slides out of the layers. -
Add the parsley, onion, garlic, tomato paste, smoked paprika, ½ tsp salt and pepper, and mix well.
-
Fold each tortilla in half. Spread the mixture in a thin, even layer right up to the edges of a folded tortilla, cover with the next one and repeat, stacking them into one block. The mixture is just enough for the whole block.
Tip: Spread it by eye: the layers do not need to be weighed. -
Trim the edges of the stack with a knife to make a square block.
-
Cut the block into 6 thick pieces and thread them onto 2 long skewers, 3 pieces each.
-
Whisk the soy sauce, miso, barbecue sauce, cumin, lemon juice, olive oil and maple syrup until the miso has no lumps. Put the skewers on a lined baking tray and brush the glaze all over them.
-
Bake in a fan oven at 180 °C for about 20 minutes, turning the skewers after 10.
Tip: The glaze gives them a light crust rather than a real crunch, and that is how they should be. -
Serve hot with vegan mayonnaise and vegan BBQ sauce on the side, or with any sauce you like.
FAQ
Will they get crispy?
Not really. The glaze gives them a light crust while the inside stays soft; extra minutes at a higher temperature changed little in our test, so 20 minutes in a fan oven is enough.
How many skewers does this make?
Two long skewers of 3 thick pieces each, about 2 servings.
Can I make them gluten-free?
Not as written: the tortillas are wheat and ordinary soy sauce contains wheat. You would need gluten-free tortillas and a soy sauce or tamari labelled gluten-free.
What does the nutrition estimate include?
The filling, 6 flour tortillas (counted at about 49 g each, before trimming), and the glaze, for 2 servings. It leaves out the olive oil in the glaze, the teaspoon of barbecue sauce, the pepper and the mayonnaise and BBQ sauce you serve them with.

The Story Behind This Dish
These skewers are built like a layered cake: mashed kidney beans and tofu with raw onion, garlic and parsley, seasoned with tomato paste and smoked paprika, spread in thin layers between tortillas until they form one block. The tortillas are folded in half, the stack is trimmed square, and the block is cut into 6 thick pieces and threaded onto 2 long skewers.
A soy-miso glaze with a little maple syrup goes on before baking, so they come out of the oven with a light crust and a soft, layered inside. Serve them hot with vegan mayonnaise and BBQ sauce, or any sauce you like.
