Instructions

  1. Put the flour, cocoa, sugar and baking powder in a small microwave-safe bowl or mug and whisk them together.

Cocoa powder poured over flour and sugar in a small glass bowl
Tip: Use a bowl or mug that holds about twice the batter: the cake rises.
  2. Add the soy milk and the canola oil and whisk into a thick batter, with no dry flour left at the bottom.

Thick chocolate batter lifted with a whisk in a glass bowl
Tip: Scrape the bottom of the bowl: dry flour hides there.
  3. Push the square of dark chocolate into the centre and cover it with the batter.

  4. Microwave for 1 minute: it rises and the top cracks.

Close-up of the risen, cracked top of the microwave chocolate cake in its glass bowl
Tip: Microwaves differ in power; ours needed exactly 1 minute. Cooked too long, the cake turns dry and rubbery.
  5. Let it rest for 1 minute, dust with icing sugar to taste and eat it warm from the bowl: the centre stays molten.

A teaspoon opening the molten chocolate centre of the cake under a layer of icing sugar
Tip: It is very hot straight out of the microwave.

FAQ

How long should I microwave it?

We cooked it for exactly 1 minute. Microwaves differ in power, so the first time check it after 1 minute: cooked too long, it turns dry and rubbery.

Can I use a mug instead of a bowl?

Yes. We mixed and cooked it in one small glass bowl, but any microwave-safe mug or bowl works if it holds about twice the batter, because the cake rises.

Is dark chocolate vegan?

Many dark chocolates are, but some contain milk. Check the label and use a dairy-free bar.

What does the nutrition estimate include?

Level spoons of flour (23 g), cocoa (5 g), sugar (12.5 g), baking powder (2.3 g), soy milk (45 g) and canola oil (13.6 g), plus a 6 g square of dark chocolate, for one cake. It leaves out the icing sugar.

The Story Behind This Dish

This is a one-person chocolate cake made in the microwave, with no eggs and no dairy. Flour, cocoa, sugar and baking powder are whisked in a small bowl, soy milk and canola oil turn them into a thick batter, and a square of dark chocolate goes into the middle.

One minute in the microwave and one minute of rest later, the cake has risen with a cracked top and the chocolate inside has melted. Dust it with icing sugar and eat it warm with a spoon, straight from the bowl or mug.
